Budget Eats – Italian Style Peppers

Holding true to my promise of regular budget eats content, I managed to whip up a quick, easy, tasty and affordable dish this weekend. I don’t know why I hadn’t thought of this before but this Budget Eats – Italian style peppers recipe is tasty and you can be made in under 20 minutes. I was once again inspired by the  Vegetables from an Italian Garden cookbook that I found at the library a month or so ago. I made a few slight ingredient adjustments, due to seasonality and also pure laziness on my part.

The recipe itself originally asked for capers, fresh oregano, reggiano cheese and fresh/homemade breadcrumbs which I unfortunately didn’t have or in the case of the breadcrumbs, I didn’t want to make. The bell peppers I used were from No Name’s “Naturally Imperfect” line which meant they didn’t hurt the wallet as much. Instead of reggiano cheese and fresh/homemade breadcrumbs I used Aurora Italian-Style breadcrumbs which combines both flavours together and reduces prep time.  I was sad to see that they didn’t ask for garlic in the recipe so I HAD to put it in, because what Italian recipe doesn’t have garlic?!?

Italian Style Peppers
A quick and easy spin on simply sauteing bell peppers by adding Italian breadcrumbs, oregano and garlic.

Instructions
  1. Heat oil in frying pan on mid/low heat and add minced/finely chopped garlic
  2. Chop red peppers in large slices, and add to heated oil & garlic in frying pan. Cook for 10 minutes, stirring occasionally
  3. After cooking peppers for 10 minutes, add pinch of salt and oregano, stir to mix. Then add Italian breadcrumbs and stir in. Cook for about 5 to 10 minutes. Avoid overcooking peppers as they will become mushy.
  4. Remove from heat and serve
